COOKING TIPS FOR YOUR BEEF:
Thank you for your recent purchase of Soaring Eagle
Ranch’s all-natural grass-fed beef, high in Omega Fatty Acids, CLA’s and
protein! Grass-fed beef is
different in many ways than grain-finished, mass-produced beef. For one, it is a much healthier alternative!
However, because the fat content is much lower, changes in your
cooking methods will help you enjoy our healthy beef.
1.
Our meat is very lean, so the heat is conducted more quickly through the
meat and can toughen the protein. Slow cooking keeps the meat tender.
Be careful not to overcook the meat. Even the most tender cut will become
dry and tough if you cook it too long. For
those of you who cook game meat or buffalo, it is very similar.

We recommend marinating your beef before cooking.
Choose a recipe that doesn't mask the delicate flavor of grass fed beef but
enhances the moisture content. Simple marinade bases using lemon, lime, vinegar,
wine, or tomatoes are recommended. For
safe handling, always marinate in the refrigerator.

Never use a fork to turn your beef . . . precious juices will
be lost. Always use tongs.

Bring your grass fed meat to room temperature before cooking
. . . do not cook it cold straight from a refrigerator.

When grilling, sear the meat quickly over a high heat on each
side to seal in its natural juices and then reduce the heat to a medium or low
to finish the cooking process. Also, baste to add moisture throughout the
grilling process.

When preparing hamburgers, sear and reduce to a lower
temperature and cover – they cook quickly.
Our burger is very lean (85% to 90% lean) so overcooking/high
temperatures will dry out your burger very quickly.

When roasting, (I often rub in a quality olive oil before I
start!) sear the beef first to lock in the juices and then place in a pre-heated
oven. Reduce the temperature of your grass fed beef recipes by 50 degrees
for roasting or at the lowest heat setting in a crock-pot.
Use moisture from sauces to add to the tenderness and keep your roast
from drying. Baste often.
8.
Let the beef sit covered and in a warm place for 8 to 10
minutes after removing from heat to let the juices redistribute.
